Su objetivo, m\u00e1s que mostrar un plato t\u00edpico ecuatoriano, era mostrar al mundo los productos ecuatorianos.<\/p><p>\u201cLa preparaci\u00f3n fue tanto emocionante como desafiante, con dos semanas de anticipaci\u00f3n empec\u00e9, en conjunto con mi equipo, a preparar los ingredientes, el plato innovador al igual que perfeccionar mi ingl\u00e9s.\u201d Dijo el chef \u201cUno de los mayores desaf\u00edos fue el idioma. Dar un masterclass en ingles no es lo mismo que tener una conversaci\u00f3n informal.\u201d<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-cc4d9d6 e-flex e-con-boxed e-con e-parent\" data-id=\"cc4d9d6\" data-element_type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-ff7ec5e elementor-widget elementor-widget-heading\" data-id=\"ff7ec5e\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Sabores Ecuatorianos en paladares internacionales<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f19d68c elementor-widget elementor-widget-text-editor\" data-id=\"f19d68c\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>El ceviche de chochos, plato presentado por el chef Carlos, fue un giro innovador del tradicional plato ecuatoriano. Creo un plato que cautivo a su audiencia utilizando ingredientes \u00fanicos como el chocho o el uchu (aj\u00ed, en espa\u00f1ol) e incorporando t\u00e9cnicas aprendidas en su experiencia internacional. \u201cQuer\u00eda mostrar la cocina ecuatoriana a trav\u00e9s de nuestros productos diversos y con sabores \u00fanicos. Nuestra cocina no solo tiene un plato emblem\u00e1tico por lo que me enfoque en los productos como tal,\u201d explic\u00f3.<\/p><p>Como ya sab\u00eda el plato y el tiempo requerido, para prepararlo con elementos aut\u00e9nticos ecuatorianos, Carlos fue llevando casi 70% de los ingredientes desde Ecuador. No iba a conseguir higos, tampoco chochos frescos sino solo deshidratados, pero no era el plan. Su dedicaci\u00f3n dio frutos cuando su masterclass fue la \u00fanica que se vendieron todas las entradas una semana antes. \u201cLa respuesta de la gente fue sorprendente. Estaban sorprendidos con el ceviche y su presentaci\u00f3n innovadora, mezclando elementos familiares con nuevos elementos.\u201d<\/p><p>La complejidad del plato consisti\u00f3 en un meticuloso balance de sabores y texturas. Partiendo del uso tradicional de ingredientes frescos, el chef Titua\u00f1a transform\u00f3 estos componentes a trav\u00e9s de t\u00e9cnicas innovadoras. Los chochos los transform\u00f3 en una especie de galleta crocante mientras que a la cebolla paite\u00f1a y al tomate los transform\u00f3 en delicados geles para apaciguar su sabor. Se transform\u00f3 al cilantro en polvo el cual fue utilizado como parte de la decoraci\u00f3n m\u00e1s que para dar sabor al ceviche. El cuero del cerdo lo reemplaz\u00f3 por las orejas porque estas son puro cart\u00edlago y mientras menos grasa tengas m\u00e1s crocante va a ser. Estas modificaciones al plato lo transformaron de un ceviche tradicional a una creaci\u00f3n de un plato completamente distintivo. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-34d66ab e-flex e-con-boxed e-con e-parent\" data-id=\"34d66ab\" data-element_type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-74210a7 elementor-widget elementor-widget-heading\" data-id=\"74210a7\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Superando retos <\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4c1153a elementor-widget elementor-widget-text-editor\" data-id=\"4c1153a\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>El camino no fue completamente f\u00e1cil. El tener ingredientes espec\u00edficos como el chocho fresco y atravesar complicaciones de un festival de cocina internacional requiri\u00f3 una planificaci\u00f3n muy meticulosa. El chef Carlos tuvo que llevar de Quito a Londres sus ingredientes empacados al vac\u00edo, al igual que ingredientes pasteurizados. Tambi\u00e9n otros ingredientes en diferentes presentaciones como el gel de cebolla o el tomate de \u00e1rbol tatemado. \u201cFue crucial mantener la autenticidad de los sabores mientras nos asegur\u00e1bamos de que todo era permitido bajo las regulaciones internacionales.\u201d<\/p><p>El \u00e9xito de su masterclass demostr\u00f3 claramente el talento innovador de nuestro chef. Al finalizar su exposici\u00f3n, no se pudo repartir inmediatamente el ceviche a los participantes, pero luego el stand de Ecuador se llen\u00f3 de gente queriendo probar la comida, sobre todo el ceviche y el postre de higos. \u201cFue un momento de orgullo cuando vi el entusiasmo de la gente y su curiosidad sobre nuestra comida.
